Swedish Almond Cookie Bars


SWEDISH ALMOND COOKIE BARS

One of my resolutions was to cook/bake more in this new year. I set off on this resolution yesterday with a selection of random ingredients and a swedish treats cook book as my inspiration. This is what I came up with...


Ingredients:
- 1 can of almond pie/cake filling
- 1 graham cracker crust (I used a store bought one, but a homemade one would also be delicious)
- Chocolate chips
- Brown sugar
- Flour
- Egg
- Almonds (whole or sliced) 

This is what I started out with. A strange array of yummy things that I was determined to force together into one dessert. The result was quite delicious. 

Step 1:
- Place the almond filling into the pie crust, spreading it evenly with a spatula or knife
* Note: It is okay if the crust crumbles


Step 2:
- Prepare a cookie layer
- Recipe:
   - 2/3 cup flour
   - 1/2 cup brown sugar
   - 1 tsp baking powder
   - 1 egg
   - 1/2 stick melted butter
- Mix ingredients well
- Spread layer on top of almond filling
- Sprinkle top with graham cracker crust.


Step 3:
- Layer top with semi-sweet chocolate chips and almonds so it is completely covered.


Step 4: 
- Place in 375 deg oven for 10-15 mins (until chocolate chips are melted)
- Use a spatula to spread the melted chocolate over the top
- Place in refrigerator to cool

Step 5: 
- Serve
- Eat
